With all of the restaurant profile data in hand, we then:

  • Establish a benchmark for future comparison.
  • Identify the guest's exact price resistance point.
  • Assign the correct menu "real estate" to each product on the menu based on guest satisfaction and profitability.
  • Identify appropriate products for promotions.
  • Develop profit targets for new products and specials.
